Ranch Smashed Potatoes

Is it really Monday already! Wahhhh. I wish the weekend was longer. Crash Hot Potatoes? Hot Crash Potatoes? Smashed Potatoes? Whichever! There are oh so many yummy variations of these. I have made many myself. This version is ranch and man is it good! I would defiantly serve them alongside tomorrows recipe.  

12 whole new potatoes (or other small round potatoes)
Olive oil mister
Kosher salt to taste
Black pepper to taste
2 tablespoons ranch dressing powder
Sour cream for garnish
Chives for garnish


In a medium saucepan over medium heat, boil the potatoes in lightly salted water about 20 minutes, or until fork tender.

Preheat the oven to 450°F.

Place the potatoes on a baking sheet. Using a potato masher, gently press down to mash each one. Tip: To avoid the little buggers from escaping from under the masher, cut an x in the center of the potato about half way through.

Mist the tops of the potatoes with the olive oil.

Sprinkle generously with salt, pepper and ranch powder.

Bake for 20 to 25 minutes, or until golden brown and crisp. Dot with some butter. Garnish with sour cream and chives.
