Garlic Shrimp With Blistered Tomatoes


I must really be in the need of warmer weather. I am over the comfort food dishes, well maybe, most likely not! I don't know that I ever will be. I have just been craving lighter and easy dishes. This one offers both. Shrimp tossed in a garlicky lemon wine sauce over pasta! I want it again for dinner! Plus it ready in under 30 minutes. You can't beat that. If you aren't a seafood lover you an easily substitute the shrimp with chicken. 


Ingredients
1 pint cherry or grape tomatoes
3 tablespoons olive oil
2 tablespoons minced garlic
1 small shallot chopped
kosher salt and black pepper
1 1/2 pounds medium fresh raw shrimp, peeled and deveined
2 tablespoons lemon juice
1/4 cup white wine
1 pound of your favorite pasta, cooked
1/2 cup chopped fresh parsley

                            

Directions
Heat a large skillet over medium heat.

Place the tomatoes, shallot, and garlic in a bowl and spoon the olive oil over them. Sprinkle with ¾ teaspoon each salt and pepper and toss. Place in skillet and shake, cover and let cook for 15 minutes until tomatoes start to blister (split). 

Stir in the shrimp, parsley, white wine and lemon juice.

Cook until the shrimp are cooked through, about 10 minutes. 

Serve warm over your favorite pasta. Sprinkle with fresh parsley for garnish.

  5. I keep going back and forth... I still have a pork roast in the freezer that needs to be eaten soon or it will sit there until next winter... love the garlic shrimp idea. I haven't made a meal like this in a while. Will be trying it soon. thanks for sharing it on foodie friday.
