OMGOSH....have you ever eaten this at Cracker Barrel? First of all it is one of my very favorite places to go when we travel up to the mountains. We don't have one here on the island. Cheesy potatoes baked to perfection. I usually am totally against using canned cream of anything soup but, I had to cheat here to get the same effect and taste. I can cheat once in a while!? So if you want a really awesome breakfast, brunch or heck even dinner side dish here it is!
2 pounds frozen hash browns, thawed
1/2 cup butter, melted
1 can (10.75 ounces) cream of mushroom soup
1 pint sour cream
1/2 cup onion, chopped
2 cups grated cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 350 degrees F. Spray 11 x 14 inch casserole or baking dish with cooking spray.
In large bowl, combine all ingredients and stir together. Spread evenly in prepared pan. Bake for 45 minutes until top is golden brown.
