Loaded Chicken Burrito Bowls

Yum! These bowls of deliciousness are oh so good. Not to mention super fast and easy for a weeknight meal. These days I am all about easy weeknight meals. I feel like this can fall into the category of a TV dinner but so much more healthy and not frozen. I put the ingredients for the toppings in the recipe how ever you can add whatever toppings you like.  And there is no bread, so it is a completely gluten free meal. I hope you like it!
Ingredients
Shredded chicken  (make beforehand and freeze...then use just as much as you need or rotisserie works well also)
1 package low sodium taco seasoning
1/2 cup salsa
1/4 cup water
Rice yellow, brown or white is fine (I used leftover rice that was in my fridge)
Black beans or pinto beans
Tomatoes 
Lettuce
Salsa
Cheese
Olives
Green Onion
Avocado

Directions
Place chicken in medium sauce pot and heat over medium heat. Add taco seasoning and salsa. Mix well then add 1/4 cup water. Bring to a boil and turn heat to low.

Place a scoop of rice in the bottom of each serving bowl.  Then top with all the desired toppings you want.  Finish by drizzling with avocado cream sauce or sour cream.

  2. This looks delicious! I'm looking for a healthy, yet tasty recipe. And, since this doesn't seem like it's going to take forever, this might be for me. I normally buy rotisserie chicken and have the breast leftover, then this could come in handy. Stopping by from http://makeitorfixit.com. Stop by when you get a chance.
