Honey Ham and Monterey Jack Panini

Happy Monday! How were everyone's festivities yesterday?
I have been on a major sandwich kick lately. I have no idea why!
Maybe it's the new job that I have where I can actually come home
for lunch and scarf down a quick bite. That seems to be what I always make. This sandwich right here is a-ma-zing!! Honey ham, Monterey Jack cheese with honey mustard sauce all toasty and melted together, woo weee! I hope you like it as much as I do!

2 slices of bread, any kind will do
1 tablespoon Butter
6 slices thin sliced honey ham ( I always use Boars Head)
4 slices thin sliced Monterey Jack cheese

The sauce:
1 teaspoon Country Dijon mustard
1/2 teaspoon mayonnaise
1 teaspoon honey

Heat grill pan or panini press to medium high heat.

Mix ingredients for the sauce and set aside.

Slather each piece of bread with butter on one side.

Layer the ham, then cheese on one piece of bread, then spread the sauce on the other piece.

Put together and grill until golden brown and cheese is melted.
