Happy Monday! I hope all my northeast coast friends fared the storm well. We got close to three feet here. The roads are a mess and we just stayed in all weekend. The kids are even off of school. Now on to the cookies. I wanted oatmeal cookies, but I did not want oatmeal raisin cookies. So I literally put whatever I had in the pantry in them! They came out so yummy. If you need a sweetheart dessert for Valentines day and don't want the cake make these.
1 cup butter, melted
1 cup brown sugar, packed
1/2 cup sugar
2 teaspoon vanilla extract
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoon cinnamon
1 cup coconut
1 cup pecans, finely chopped- I put mine through the food processor
1 1/2 cups white chocolate chips
2 1/2 cups old fashioned oats
Preheat oven to 350 degrees and line pans with parchment paper or a silpat liner.
Melt butter. Place brown sugar and sugar in a stand mixer, add butter and cream together for 3-4 minutes. Add eggs and vanilla extract and beat on medium for 1 minute.
In a separate bowl, combine flour, salt, baking soda and cinnamon.
Add dry ingredients to the wet and beat until combined.
Stir in coconut, pecans, chocolate chips and oats.
Place dough balls about the size of golf balls on cookie sheets with a two inches between each and bake for 10-12 minutes.
Let cool on cooling racks and store in air tight containers.
