Have you ever had one of these? My oh my if you haven't you need to. Little balls of fried chickpeas plus amazing other flavors. They are the perfect snack, side dish or stuffed into a pita with lettuce, onion, tomato and cucumbers along with some yummy tzatziki sauce. I love Geek food all of it. You can't go wrong with anything on a Greek menu.

Corn oil...does anyone use it? I always go to the olive or canola. Force of habit I guess. I was recently contacted by the folks over at Mazola oil. They sent me a bottle of their corn oil to try. I created this recipe along with the help of Mazola's oil. Are you familiar with plant sterols? Plant what?

Seasoned chicken oven roasted to perfection. Serve it along side your favorite potato and veggie side. This dish is a perfect weeknight treat! Relatively simple to make, yet utterly delicious to eat.I make a lot of chicken. It is my other favorite thing to eat instead of pasta. I think I have made it in every way shape and form at one time or another.

Pasta and cheese two things in this world that a near and dear to my heart. I love baked mac and cheese but, this time I wanted the creamy gooey kind. You can really only achieve that if you don't bake it. My kids like it better this way also. If you want the ultimate comfort food give this a try.

My love affair with Italian food is never ending. I just love Sunday dinners that consist of a pot of sauce and anything that goes along with that. The possibilities are endless. These are my version of eggplant parmesan lasagna or deconstructed eggplant rollatini. Eggplant rounds baked until golden brown then layered with ricotta, sauce and mozzarella. They are a must try. What do I think of for dinner for Valentines Day or even just date night? STEAK! I am a firm believer it is a way to any mans heart. Now when you add this butter to these steaks he may just love you even more. There is something about horseradish that complements any steak so well. There is also something about butter that compliments steak even better. I love compound butters. I like to make them to. They are super easy to put together. So why not put these two ingredients together. Well the flavor combination did not disappoint I served these along with baked potatoes, steamed snow crab and roasted broccoli.

Happy Monday! I hope all my northeast coast friends fared the storm well. We got close to three feet here. The roads are a mess and we just stayed in all weekend. The kids are even off of school. Now on to the cookies. I wanted oatmeal cookies, but I did not want oatmeal raisin cookies. So I literally put whatever I had in the pantry in them! They came out so yummy. If you need a sweetheart dessert for Valentines day and don't want the cake make these.

Since I am the North East is getting slammed with snow and since I want Spring soooo badly, I give you salad. Not just any leafy plain old salad amazing broccoli salad. This stuff is so good. I have been making it once a week for the last few months. Even my picky eaters love it. Time to batten down the hatches! All my North East friends stay warm and let's hope for the best. I am praying we don't flood and loose power!

What a crazy week already. I started a new job, we got a new dog and just with the everyday hustle and bustle...well I am already wiped out. I can't wait for Friday! Any who I had some left over roasted beast. I haven't made Stroganoff in forever. So instead of the plain old kind I added some fresh spinach, that's gotta make up for the sour cream right? It makes up for the sour cream. That's final!

Is everyone ready for the big game??? I don't know what I like better the commercials or the food. It is most likely the food. It's the one day after new years we get to be bad and eat bad right? Well this chicken is so dang good let me just tell you...The sauce just might be better than the chicken. If you are familiar with Franks Red Hot sauces then you may or may not know about their Sweet Chili sauce. This stuff is the bomb! It's good alone but I can't leave well enough alone and had to add "stuff" to it. Now back to the chicken; crispy panko crusted with crunchy toasted coconut. This is sure to be a new family favorite.
