Italian Bean and Pasta Soup


So I have been so out of the blogger world lately.

Creamy Potato Gratin


How was everyone's holiday?

I still have not even put up my tree.

Three Ingredient Pumpkin Dump Cake




We all know how I am not a baker.

With that being said when I do bake, I bake things like this. 
Not only is it the most insanely easy fall dessert to make. 
Angle food cake, (who doesn't like that?), pure pumpkin. 
All topped with a dreamy glaze.

I am so grateful the weather held out and it was fairly warm out. Unfortunately I some how have got myself sick with a cold and cough. Better me than the kids. Strangely enough they are the ones who usually get me sick. So today I will make some chicken soup to help kick this cold!

The Best Hot Roast Beef Sandwich


I now serve you the best "manwich" on the face of the planet. Not only is it the best sandwich, it has the best coleslaw ever on it. Hot roast beef with cool crisp coleslaw. I don't usually label my recipes "the best" but, I had this a while back at a sandwich shop and I knew I had to recreate it. So it has been kid tested and man approved and I strongly suggest you give it a try!

Blackened Chicken

Can I just say I have finally gotten my kids to eat quinoa! Oh and some squash I snuck in to this dish. This was literally a clean out the produce basket kind of dish. I ate it just alone for a meal. Sometimes that's just they way you gotta do things!

Western Style Fritatta and Seasoned Potatoes




This is my favorite way to eat eggs!  Not to mention potatoes! Omelets and frittata's are eaten not only for breakfast, but also as a main dish. 
What is the difference between an omelet and a frittata?
The difference boils down to a matter of folding in a filling rather than mixing it in. Omelets traditionally have the egg mixture cooked and folded around a filling, while a frittata just mixes it all up, cooked in a mishmash combination all at once. Frittata's are often served at room temperature, making them perfect for brunches or larger groups.

Buffalo Chicken Meatball Sliders




Happy Friday! Is it me or does anyone else hate the fact that it's dark by 6:30 pm here on the east coast? For some reason this year I having some trouble adjusting. Where there's fall there's football, and where there's football, there's all the yumminess that goes along with it. Just like these! I have never used ground chicken until I gave these a whirl. It was not bad at all. My kids loved then so we will be having them again.

Roasted Pepper and Mozzarella Purses



                            

Oh cheese how I love thee. Especially some fresh "mutzy" mozzarella. I found these really great little roasted peppers at Sam's Club. They are just the right size to stuff in a nice slice of cheese and a basil leaf. There you have this cute little purse. Just perfect for appetizers. Drizzle with some aged balsamic and mangia!

Super Chocolate Cake Mix Brownies





Hello chocolate and hello Monday. I was in the mountains all weekend celebrating a family members fabulous weeding overlooking the Hudson River at a historical park. The weather absolutely was gorgeous.  The leaves were changing; it was breathtaking  See my Instagram page for pics. Now onto these bad boys. Holy chocolate. We all know I do not like to bake all that much, but the kiddies wanted brownies. Of course I had no brownie mix and did not have the right ingredients to make them from scratch so they came from cake mix.

Honeycrisp Cobb Salad


We all love Honeycrisp apples right? I know I sure do. "Seeing they are called hybrid apples", I decided to do a little research on these beauties to see where they come from. 
The Honeycrisp apple was produced from a 1960 cross of Macoun and Honeygold, as part of the University of Minnesota apple breeding program. Who knew the called it apple breeding.

Pasta Marscapone with Ham Peas and Mushrooms






How was everyone's weekend? Mine was really long. I had a party to cater and I'm still pretty tired. This recipe is an oldie but goodie. Super simple to which I my kind of meal.
This is a one dish wonder. Pasta with peas, ham, mushrooms all cooked with a tomato marscarpone sauce. So easy to make and tastes like your eating it from an Italian restaurant.

Sesame Chicken Strips


Happy Fall Y'all! It's finally here my favorite time of year. This recipe is also another favorite thing of mine. My son and I get it all the time when we got to that certain chain restaurant that has something like TGI...in its name. This is a copycat version minus the booze.  After making it for the first time I just may use the coating for all of my chicken nuggets and strips. It is by far the crunchiest one I have ever made and help up very well. It was a bit time consuming to make but well worth the wait. I promise it shall not disappoint!

Slow Cooker Meatballs in Gravy


                             
Perfect tender tasty meatballs in amazing gravy spooned over hot cooked egg noodles. Classic comfort food. Who doesn't love that? I love these lil guys. I also love the noodles to. I could eat them as a meal, hence the carb addiction. You can use any kind you like, I like the extra broad ones. They come in a bunch of sizes. Extra broad, wide, no yolk, whatever you prefer. You will end up with the same result a full belly that's for sure.

Three Ingredient Overnight Steel Cut Oats


I just realized I have not posted or created a breakfast recipe in forever. Oatmeal is one of my most favorite filling breakfasts. That's the key filling! I am a breakfast girl, need it want it, cranky if I don't have it. Coffee will still always come first. I discovered steel cut oats about a year ago and let me tell you I really like them so much better than the rolled ones. They have a more of a porridge consistency than the regular rolled oats. Oatmeal is the breakfast of champions this time of year. The versatility of it is endless. Toppings, sweetness and flavors.

Taco Wedge Salad



                          

This is the easiest weeknight meal other than take out. My family just gobbled them right up. They usually don't think of salad as a meal. I on the other hand do. Ground beef, black beans, tomatoes and cheese smothered with thousand island dressing all topped with crispy tortilla strips. You can add any other toppings you like but trust me when I say you must use thousand island dressing. That is what makes this salad oh so good!

With the end of summer near (not that you can tell with this weather) I try to squeeze in as many summer menu items as I can to cook. Well except for the ones I am sick of.  This one is one I am definitely not sick of. I can eat this all year round. Sweet summer vegetables, creamy parmesan cheese sauce over farfalle pasta. Chicken Salad BLT


There is a heatwave today here in NY. How the heck did it go from being 40 degrees at night to needing my a/c again? It is 90 degrees already. I'm not happy. I do not like the heat. We do not get along. Please come back fall! 
Some days you just want a sandwich. Other days you just need a sandwich with the addition of some bacon, lettuce, tomato and chicken salad. This is my very favorite chicken salad recipe. Simple to make this sandwich is pretty plain but tastes so delicious. I even made it on plain old white bread toast. You can use whatever bread you like.

Creamy Tomato Tortellini Soup with Roasted Garlic


 I have a confession my friends. I never liked tomato soup! I never liked tomato soup until I made my own. I have a bad relationship with any soup that comes from a can. It just doesn't taste homemade to me. I guess I'm weird. This soup is a stick to your ribs meal in it self soup. Sweet roasted garlic combined with the tomatoes. it's so good. I posted this few years back but I decided it needed a little tweaking. So here is the redo.

Brown Sugar Crusted Walnut Apple Cake



School has officially begun and it's almost Fall ya'll!!! It definitely feels like fall this morning. Fall is my favorite season next to spring. I love the air, the leaves, wearing my boots and a sweater....there is so much to list. To kick off the season here is a fantastic cake. The smell of it baking alone reminded me of Fall. As it bakes the walnuts and apples caramelize at the bottom. When it's cool and turned out oh baby!! It makes you want to just pick off the top.

Creamy Ranch Pork Chops {Slow Cooker}


T minus 7 days until school starts. Whoot Whoot! My house will finally stay clean for more than an hour.  My little darling (tornado) starts the third grade and my big guys starts (tear) ninth grade. His first year in high school. This I am not really ok with. 
Now on to the recipe....This is one of my favorite set it and forget it, saw it a hundred times on Pinterest recipes.  I finally gave it a try a few weeks ago and it was a hit. Anything that's easy and the kiddies like is a check in my book! Especially when its a week night meal!

Baked Crispy Chicken Nuggets


TGIF! Anyone have any cool plans for the weekend? We will be just trying to get in as much beach time as possible before it gets to cool here. Now onto the recipe. I honestly will never fry another chicken nugget ever again after making these. They are perfectly crunchy. I have made them several times now in different variations, playing the spices.This version is just pretty plain. If you wanted to leave the chicken breasts whole or cut into tenders you could as well.

I can't believe the summer is almost over! Where did the time go? I have to admit though, that I am kind of waiting for school to start. I need to get back into that groove of a set routine. This dish is perfect for back to school weeknight dinners and is ready in a flash!

Baked Spanish Rice Pilaf

This dish is such a nice twist in ant traditional rice pilaf recipe. Did I mention its baked? Who knew you could bake rice? I made this for a birthday party we hosted for my father in law as a different option from the traditional bbq menu. I <3 any and all Spanish foods. So any time I get to make it I jump at the opportunity because well the hub's isn't so crazy about it. I will never understand! You could always cook it on the stove top just like a traditional rice recipe as well, I have done both.

Basil Butter Hasselback Potatoes


I am so happy to say our heat wave has ended here in NY. It is still a tad humid by us but that comes with the territory of beach life. There is nothing better than an ocean breeze at night coming off the bay it literally drops 20 degrees. I was also happy to be able to put my oven on again. I was a little grilled out. I have never made hassselback potatoes so I came up with this version. They were delicious. I love basil, garlic and butter of course, they go oh so well together.

Marinated Five Bean Salad




 Growing up my dad would make this salad all the time. Even just for dinner. It is a great way to get the kiddies to eat their veggies and protein. My daughter gobbled it right up. It's a delicious combination of five beans and yummy homemade Italian marinade. You could also take this to a cookout, it's mayo free and is such a nice change from the regular stuff. It makes a large amount so you will have to feed a crowd or eat it all week long.

Grilled Steak Fajita Quesadillas

Sometimes you just need to change thing up a bit. I have a serious love of all kinds of Spanish and Mexican foods. Everyone loves fajitas right? Why not make it a quesadilla? I am so glad I did. Thin slices of steak, peppers, onions and we cant forget the cheese! This time I grilled them instead of just cooking them a flat skillet. Grill marks are so purdy. There is also a trick in the cooking directions to make your quesadillas never fall apart again, along with it helping with portion control. hehe

Chicken Banh Mi with Sriracha Aioli


A traditional Banh Mi is a Vietnamese sandwich made with pork and a lot of fish sauce. Well I totally omitted the fish sauce. No thanks...yuck! It worked out great with my substitutions. 
  I am so in love with this sandwich. I had it a few weeks ago at a small bakery that is totally organic and only uses the freshest ingredients. I dream of this place because it was that good.
I must go back. It's worth the hour drive west. So I had to make it. What I like about this sandwich is there is no cheese, it's not really slathered in sauce and the crunch of the pickled cucumber and carrots is just so good!

Blueberry Fields Salad




Hot enough for you? It's been in the mid 90's here all week in NY. So hot that my 7:30 pm breeze has been non existent. I look forward to that breeze every night. I guess I will take the heat any day over the freezing winter. I do love summer I also just love summer salads.
The possibilities are endless. The abundance of fresh farm fruits and vegetables is just great during the summer months. There is nothing better than going to the farm stands and the farmers market. Long Island is filled with farms on our east end. Many weekends I find us just taking the short drive a little further east to see what farms we come across and what they have to offer. This salad was an inspiration from some fresh blueberries that were picked up from a local farmer.

Maple Infused No Bake Baked Beans



Simple and delicious. Quick and easy serve with your favorite BBQ food. Cooked on the stove top, this is a great shortcut to the traditional baked in the oven all day beans. Serve them along with a nice steak or grilled chicken, even dip some cornbread into these bad boys. They are a staple at our table during grilling season.

Potato, Ham and Cheddar Fritatta


 I like my eggs fluffy and well risen when I make fritatta's. They are so easy to make. I love combining a bunch of ingredients like this, baking them off and wallah you have breakfast! Heck even lunch or dinner if you like. Just mix all the ingredients up and pop it in the oven in about 30 minutes its done. I hope everyone had a fabulous weekend!

Roasted Red Potato Salad



I just love summer and all the food that comes along with it. I love finding different ways to change the regular classics around. This is a different version of potato salad. This is just darn good. I also may have a slight obsession with potatoes. You won't have to worry about keeping this one cold. Coated with a simple dressing of lemon juice, balsamic vinegar and Dijon. This is mayonnaise free, perfect to hold up in the outside heat at your summer cookouts.

Roasted Vegetable Salad

How was everyone's weekend? It was graduation central in our town. Had a few party's to go to as well. Speaking of party's I made this dish for out annual fathers day bbq. It was really good. You can serve it warm, room temperature or even cold. Whichever you prefer. You can ultimately use any kind of veggies and make the portion size to your needs. I ended up making so much that we used the extras for a side dish and put the rest along with some grilled chicken in wraps for lunch! Yum!!
