Tortellini Pasta Salad




The best part of pasta salad is you can make a huge batch of it and eat it all week for lunch or even dinner,if you want to. I want to. I make all different kinds of pasta salad. The possibilities are endless really. You can basically throw anything on hand onto some cooked pasta with your favorite dressing. Homemade or even bottled.

Grilled Chicken Caprese


                               

If you love mozzarella as much as I do this meal is for you. This is a quick and easy dinner. It comes together in a flash. Balsamic marinated grilled chicken topped with tomato basil and fresh mozzarella.  One of my favorite dinner dishes.

Roasted Reds with Spicy Chimichurri

Roasted Potatoes, you an do so much with them. Breakfast, lunch, dinner. Heck I'd even eat them as a snack. Oh wait I do. I guess potato chips count. Roast em, boil em, grill em, make salads out of them the list goes on and on. I decided to make these spicy with fresh garlic and some red pepper flakes. Who says  chimichurri has to only be on meat?

Hot Dogs With Onion Sauce







Every been to NYC and had a dirty water dog? Yes here in NY we call them dirty water dogs. I'd love to assume that's not the case at all.  I've heard them be called push cart dogs, city dogs yada yada yada.  Sabrett hot dogs with onion sauce and mustard. Maybe another with mustard and sauerkraut. Who's counting. Getting one of these is just a ritual when we go into "The Big City" as my kids call it. If you haven't had the chance or live on the other side of I don't know where give this recipe a try. Get some Sabrett natural casing beef frankfurters and plain white bread hot dog buns. Top with mustard and these onions and there ya have it.

Cranberry Almond Granola

I have never made my own granola until now. I always paid a small fortune for it in the grocery store. Jeez it really is pretty dang expensive. I can tell you I will never buy it again. It is one of the easiest thing to make and so versatile. I've snacked on it, put almond milk in it, and my kids sprinkled it on their yogurt.

Blackened Southwest Chicken Salad




Whoa nelly! This was a fantastic dinner. It would be a fantastic lunch as well. Why pay up to $13 for a salad in a restaurant when you can make your own at home. Not to mention you know exactly what's going  in it.  I have to tell you as I was making this my baby girl, aka love bug, aka DQ (drama queen) aka Maddie who is 6 see's me chopping the avocado. Oh mommy "WACAMOLE!!!" can I put some on my face? Of course I instantly burst out laughing, all she does is make me laugh all day everyday. I ask her what TV show did you see that on? Assuming that is how she came up with this. She had no answer and ran off to her next endeavor.  I tell ya kids are just to much!

  • Need a perfect date night dinner? I strongly recommend this dish. It is fairly simple to make. I would pair it along side some mashed potatoes and a nice green veggie. This is truly a man lovin meal...even though it's a tad elegant.

Peaches and Cream Cake


Sorry friends I needed to take a week off. All the hustle and bustle of the holiday and it being smack in the middle of  the week, it got a little crazy around here. This cake is a favorite summer time treat. This is my aunts recipe. Every birthday this is the cake you got. Seeing she has seven children I got to have it a lot as a kid.  It is the easiest cake to put together and oh so delicious.
