Antipasto Pasta Salad


 As much as I hate Mondays, I am glad the weekend is over. My cheese may have slid off my cracker here, I never say that. It was just one of those weekends. This is the first year in ten years I didn't make corned beef and cabbage on St. Patty's day. I always make it for my dad but he went on vacation, lucky him. How ever we had a small gathering of close friends and had some finger foods, chips, dips, veggies and mini sandwiches which were awesome. I also made this pasta salad. I hope you like it.

Crispy Green Bean Fries

Crispy crunchy yumminess. Ever been to T.G.I. Fridays? I have. They are all over the east coast. They serve these alongside wasabi ranch dipping sauce and oh man are they good. Who would have ever thought you could make green bean fries? This version is fried, you could always bake them for a healthier version. I was shocked that coating held up so well on them, double dipping is defiantly the key here.

Baked Hot Clam Dip

This is an old family recipe. It's like a giant baked clam served warm with crackers. It could be prepared, up until the baking, a day in advance. Just put it in the refrigerator and bake when ready the next day! If you make it and freeze it for the future, just thaw and reheat. This is a family favorite and a crowd pleaser when I make it for guests.

Beef Negikami


Have you ever tried this? If not I seriously recommend you do! I never thought that scallions wrapped in thin slices of beef with Teriyaki sauce could taste so good. The taste is incredibly juicy, tender and full of flavor. I had Beef Negimaki for the first time at a Japanese restaurant we frequent. Some people put asparagus in it, but I absolutely do not like asparagus. I know I'm weird. I cringe of the thought of it. I also take it off my plate at restaurants if it is a side!  Told ya I do not like it. I also do not like yogurt, I will only eat it frozen. Weird again I know. Some things I just never acquired a taste for. Those are two of them.

Dirty Mash


Dirty Mashed Potatoes, skin on mashed potatoes, or plain old lazy mashed potatoes. I fall into more of the lazy mashed part. When I am exhausted after working all day and still wan't a real meal I'm sure everyone else in my house does to, I make these with whatever meat I make. I could eat just the potatoes, sometimes I do..shhhh
