Chicken Souvlaki with Homemade Tzatziki Sauce


There are many variations of this dish. This is my spin on it. I love Greek food. Every time I go to my local diner this is what I order. Forget the eggs and bacon, I want this! Chicken, peppers, onions and tomatoes all sauteed together and spooned over pita bread. Then topped with Tzatziki yum!!!!!

Sweet and Spicy Smothered Pork Cutlets

Since the weather has been so cold here. I have been craving some barbecue. Lord knows I was not about to go outside and freeze while grilling. Sorry I just won't do it. So I supplemented with some awesome sauce smothered a top some pork cutlets. I don't know what it its but bbq sauce and pork go really well together. Served along side my bourbon scalloped sweet potatoes oh man.....its good!

Three Cheese Cajun Chicken Pasta Alfredo



I have seen many many versions of this dish. I decided for me that it needed to be lightened up a bit. Well lightened up for that day anyway. I cook what I like to eat, trying to keep it healthy. What's a girl to do sometimes you just gotta throw in the cream and butter. Anyway....This has Parmesan, Fontina and Pecorino Roman cheeses in it along with tomatoes, shallots, chicken and whole grain pasta. Oh and just a little kick! It's ready in under 30 minutes too! Give it a try you will like it!

Broccoli and Potato Soup


Broccoli and potatoes all pureed up into a nice creamy soup. The potatoes are what makes it velvety smooth, the broccoli and cheese make it taste like a loaded baked potato. Now who doesn't like a loaded baked potato! Top this off with a little crumbled Prosciutto or bacon and enjoy!

Mexican Chicken and Rice Casserole


I try not to cook a huge meal on Fridays and Saturdays. The kids are here there and everywhere. I had some chicken breasts defrosted and all the fix-ens for this in the pantry and fridge so what the heck. I said lets give it a try. It came out pretty darn good and so easy! I cooked my chicken in the slow cooker just because I had the time. I've seen many versions of this all over the web and on food blogs. How ever this is my version of it.

Hidden Vegetable Meatloaf


Not ya mama's meatloaf for sure! Carrots, mushrooms, celery, garlic and onion all hidden away in a breadcrumb mixture that binds this bad boy together. With the help of some other ingredients. All three kids had no clue there was any veggies in this. One only eats raw veggies, one eats none and the other hates mushrooms. Hehe, I got them to eat their veggies!!!

Bay Scallops And Garlic Shrimp In Creamy Coconut Sauce



Living on this long island, I come across an abundance of Peconic Bay scallops. My dear father in law who works at a marina brings me tons of fresh ones. Looking for something different to do with them other than the usual panko deep fry, I saw this on Skinnytaste and adapted it to my liking. Bay scallops are much much sweeter than sea scallops. These little guys in combination with the shrimp and all the other flavors is just bangin! This sauce is so good, exploding with flavors. You must try this – trust me! I served mine over angel hair pasta, rice, couscous or quinoa would work just as well.

Tri Color Loaded Baby Potato Cups

I love these little spuds. They are about and inch or two around and a so full of great nutty flavor. They are a combo of baby Yukon Gold, baby Reds and baby Purple or Peruvian potatoes. The color combo is just so pretty. I had some left over from dinner since I made the whole bag, New Years Eve was the next day so I came up with this quick and easy appetizer. You can even serve them up for a side dish at dinner.
