Broccoli Cheddar Jack Soup

Oh how I love soup. Did you ever have that one favorite dish where you licked the bowl clean? I may or may not have done that with this soup. I am pleading the 5th; sorry. I actually had full intentions of making broccoli and regular cheddar soup but only had cheddar jack cheese. Which really is my favorite anyway I use it in a lot of my dishes. 

1/2 cup chopped onion
1/2 cup grated carrot
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups 2% milk
3/4 cup chicken broth
2 cups cooked chopped fresh or frozen broccoli
2 cups shredded cheddar jack cheese

In a small saucepan, saute onion and carrots in butter until tender. Stir in the flour, salt and pepper until blended; gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened.
Add broccoli. Cook and stir until heated through. Remove from the heat; stir in cheese until melted. Garnish each serving with more cheese.
