Slow Cooker Scalloped Potatoes

This picture does not do these potatoes justice. This was such and easy side dish to throw together and forget about. Sick of those boxed scalloped potatoes but always afraid to try to make the real ones? Well give this a try. I assure you, you will not be disappointed.

1 cup sour cream
1 cup heavy cream
1 medium onion thinly sliced
1 tbsp Worcestershire sauce
1/2 teaspoon black pepper
1/2 teaspoon salt
2 lb small red potatoes 
1 1/2 cups shredded cheddar cheese
1/2 tsp paprika
3 tbsp chopped fresh thyme for topping

Thinly slice potatoes and set aside.  Mix sour cream, heavy cream Worcestershire sauce, salt and pepper together in a large bowl.  Add thinly sliced potatoes to the mixture and mix until all potatoes are well coated.  Spoon 1/2 of the potato mixture and half of the onion into a crock pot sprayed with cooking spray.  Top with 3/4 cup of shredded cheese.  Repeat layer with remaining potatoes and cheese.  Cook on high for 3.5 to 4.5 hours or on low 7 to 8 hours. Serve topped with a sprinkle of paprika and fresh thyme.

  2. I love any recipes that uses the crock pot cleverly. Just saw one that cooks a whole chicken. Now this! Very nice :-)
