Roasted Dijon Potatoes


Ahh the almighty potato. I don't know about you but I can make a meal out of just potatoes. They are one of my favorite vegetables. I came up with this dish because we do eat them a lot and wanted a new version to try. Well they were great. I served them along side my German Pork Chops and Kraut. You could serve them with just about anything. I think potatoes are one of the ultimate comfort foods. Hope everyone has a great week!

Ingredients
3 pounds of Yukon Gold potatoes; peeled and diced
1 tablespoon of good Dijon mustard
1 teaspoon of brown mustard
1/2 teaspoon Kosher Salt
1/4 teaspoon black pepper
1 tablespoon dried parsley
1 teaspoon dried thyme
2 cloves garlic; minced
2 tablespoons Olive Oil

Directions
Preheat oven to 400 degrees F. Place all ingredients in a bowl and toss together. Place in a 13"x9" baking dish or a parchment lined baking sheet for a crisper potato. Bake for 30 to 40 minutes and serve hot.

  1. Love your potato recipe. I spent many years in the South and when you would ask what they were having for dinner, the first thing they said was potatoes! Thank you so much for sharing this recipe.
