Dad's Stuffed Cabbage

I may not be around for a few days or so. This dang hurricane is going to slam right into our little beach town. And since we will need to evacuate and head inland I am not sure what the after math will be. The schools have closed, Halloween will be non existent, and we will most likely have no power for another ten yes ton days like last year. Wish us luck! What a Monday.

So what do you do with 150 pounds of fresh veggies that your farmer friend just gave you? Shriek  I don't even have room in my freezer for all this.  The cabbage alone were 10 pounds each. Needless to say I have been giving as much as I can away. 

Because it's that time of year to get away from the barbecue and get back to "good old home cookin", here is my dad's recipe for Stuffed Cabbage. He has tought me how to cook since I was a child. Now I cook for him. This time of year makes me so happy to just make the stick to your ribs comfort food. I hope you enjoy it!

Smothered Ranch Chicken

Chicken, Bacon, Ranch Oh My!  Ever try this? You must. I really really mean you must. I have even out it on a nice piece of crusty bread. This week I am seriously procrastinating starting Christmas shopping. I don't even know what the heck my kids want yet. My daughter who is 7 is super easy. My son how ever is 13 and is just so hard to shop for. No more Lego's and I have ran out of room to store them all. Any ideas? He is my brianiac loves to read and loves american history. Ish....I just want to get through Halloween and Thanksgiving.  Have a great weekend!

Broccoli Mac and Cheese Soup

There is something about cheese and broccoli pairing so well together. I just love it. Then when you turn it onto a soup it's even better now add some pasta and boo-ya! Heaven on a spoon. I am a self admitted cheese-acholic as well as having many other acholics. This is a less fat version of the norm. Lord knows there are a ton of calories in the regular stuff you would get in a restaurant. It perfect for this time of year to warm you right up.

Chicken Enchilada Pasta Bake

Mexican food and pasta I think so! When I could not decide what to make and was sick of the traditional pasta and tomato sauce, and wasn't in the mood for taco's I made this. You can make it in a skillet version or bake it off. I liked the baked version better. It was a hit. Usually when I make "nontraditional" things my family gives me the what the heck is this look. They are all such a meat and potatoes clan. So when  you are in the mood for a pasta with a twist give this a try!

Pintresting Delicious Soup!

Oh Pinterest, I may be addicted. I think I should start a Pinterst anonymous group. If you have never explored I highly recommend you do. Anything and everything is on there. Not to mention it's a great way to network with other bloggers. Sorry I just can do the Twitter thing. There isn't enough time in the day to "tweet" my life that most likely would not interest anyone. :) So here's to soup and just a few of the amazing recipes I have found on Pinterest. They are my favorite ten soups so far and I plan to make everyone. Roasted Dijon Potatoes

Ahh the almighty potato. I don't know about you but I can make a meal out of just potatoes. They are one of my favorite vegetables. I came up with this dish because we do eat them a lot and wanted a new version to try. Well they were great. I served them along side my German Pork Chops and Kraut. You could serve them with just about anything. I think potatoes are one of the ultimate comfort foods. Hope everyone has a great week!

German Pork Chops and Kraut

It's Oktober Fest! Any one who has some German in them knows about all the yummy delicious food that comes with this month. Oh and the beer as well. Not sure just what Oktoberfest is click here. So since I am German and have a love for really all food, here is one of my fall favorites. Tender pork baked with Bavarian Sauerkraut (not the regular stuff) apples, onion and lot's of seasoning. Trust me on the Bavarian kraut, It shall not disappoint. It makes all the difference.

Slow Cooker Awesome Enchiladas

Enchalidas baby! I just love love love Mexican food in every way. Any chance I can eat it or make it I do. This is the easiest way to make them. I am a firm believer that meat should totally shredded in Mexican cooking. Cooked to the point it falls apart itself. Weather it be chicken, beef or pork. Even when I make the simplest quesidillas for the kids I take the extra mile to ensure the meat is cooked this way. It's just not the same with out it.

Creamy Chicken and Parmesan Dumplings

It's a wee bit chilly here this October morning. Tis the season to eat soup! I just love soup in ever way shape and form. Thin, thick, creamy, stew, rice, barley, noodles chicken, turkey, beef, veggie, all of it! Now there is quite a few different versions of chicken and dumplings. Some are just with no veggies, some have a thin soup base, others a thick soup base. I like mine with just a touch of cream. Just enough to make it nice and velvety smooth. Along with chicken and yummy veggies. I also add Parmesan cheese to my dumplings to make them a little interesting. They are pretty boring with out any flavor. I hope everyone had an awesome weekend!
