Peanut Butter Nutella Sandwich Cookies

Last night we had a wicked storm here on the east coast. I can always hear the ocean from my house but last night it sounded like a jet plane coming in for landing. It was roaring! Then it poured most of the night with some wicked winds. Thankfully we had no damage here. Now on to the cookies. Oh how I love these. Well I should say my kids love them even more. Peanut butter cookies slathered with Nutella and sandwiched together. Need I say more?


1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 Jar of Nutella, I don't have an exact measurement just put as much as you like. You will have plenty left in the jar.


Pre-heat the oven to 350 degrees.
Cream peanut butter, butter, brown sugar and white sugar for the cookies. Beat in the egg and vanilla.
In a small bowl mix together your flour, baking soda, baking powder, and salt. Mix into the creamed butter and sugar mixture.

Drop teaspoonfuls (or use a small cookie scoop) of dough onto a parchment lined baking sheet. Make a criss cross with a fork to flatten the cookies.

Bake for 10 minutes and allow to cool.

When cookies are completely cooled, flip half of them over. Spread with a spoonful of Nutella use as much as ya like, and then top with the remaining cookies.

  1. My first choice would be to curl up with a spoon and both the jars of peanut butter and Nutella. These cookies would be a close second choice!
