Peach Salad With Ginger Dressing

Have you ever gone to a Japanese restaurant and had salad with ginger dressing? Oh man if you haven't you had better try this. The dressing is jam packed with all sorts of ingredients that just come alive when you eat it. Usually you will get a plain iceberg lettuce covered with this dressing. Since it is peach season and ginger and peach really go well together I said lets give it a try. Well it was delicious and everyone loved it. I really wouldn't care if no one liked it because that's how much I like it and that means more for me! 


For the dressing
1/2 lb carrots, shredded then chopped
1 Tablespoon fresh minced ginger
2 cloves garlic, minced
1/4 cup fresh lemon juice
2 Tablespoons water
1 Tablespoons rice wine vinegar
1 teaspoons roasted sesame oil
1 teaspoons canola oil
1 teaspoon agave syrup
a few dashes of sriracha
1/4 teaspoon salt
Blend all ingredients in a food processor. If dressing is to thick thin out the dressing if needed with a little water.

For the salad
1 package of field greens washed, I used organic
2 large ripe peaches, washed and sliced
8oz fresh mozzarella or goat cheese

Spread lettuce across a platter. Place peaches all around so they look pretty. Pour liberal amounts of the dressing across the salad and top with pieces of cheese. I just ripped them off with my fingers.
