Chicken with Forty Cloves of Garlic

Ahhh garlic. One of the many ways to keep the vampires away. Let me tell you this dish will do it. How ever it's suprisengly not that garlicky. The garlic turns so sweet and savory as it browns it's delicious! This is my spin on this classic french dish. Oh how I love french food, it's just so good all of it. Maybe not the pate part. I don't do liver or pate. Let's jsut forget that I even brought that up. My apologies.

Summer Roasted Corn

Roasted corn baby! We have a friend that has a dad that is a farmer out on the northeastern end of the island. There is something about this corn that is just so sweet and amazing. Every summer I come home from work and there is a "FIFTY" pound bag of fresh corn on my deck. Yes I said fifty. Gosh I love this farmer I call him Sanford. His name is really Will. He even brings us winter veggies. It's a good connection to have. We've got the veggie hook up!  So I have managed to give all my family, friends and neighbors fresh corn. Roasted some up for us and still have ten pounds left. I go through this every year. So I am just going to freeze the rest. This corn is a staple at any festival or pumpkin field you go to here on the island. It's soaked in water, grilled to perfection then dipped in melted butter.  It doesn't get any better than that!

Black Bean Turkey Burgers with Avocado Ranch Sauce

So we all know how blah blah bland ground turkey can be. Well after seeing Mrs. Paula Deen make these bad boys I fell in love. These are by far the ultimate turkey burger. Jam packed with flavor and a surprise crunch. I topped mine with avocado ranch sauce and some cool crisp lettuce. I promise they will not disappoint.

Philly Cheese Steak Melts

Ok so this is a total cheaters meal. Ready in just about 30 minutes. It is a perfect quick and easy weeknight meal. The "manziz" will love them to. Remember the way to a mans heart is through his stomach. That what mine tells me anyway. Deli meat piled with onions cheese and smothered in au jus. All on top of crusty bread.

Caprese Salad

Now that all the tomatoes are perfect it's time to gobble them up with some fresh "mutzie" I know that's spelled wrong. I love all cheese any kind any texture and cheese. This happens to be my favorite way to eat mozzarella. Drizzled with some aged thick sweet balsamic vinegar...heaven!

White Chocolate Cake Batter Popcorn Joe Dirt would say. Very very funny movie if you haven't ever seen it. Anyways, I made this addicting sugary goodness with my daughter for a get together with friends we had. She just had to make a snack for everyone to. Why not have cake batter popcorn along with chips, dip, and some wings. I really don't know where this recipe originated from, there are so many on the internet. But whomever did come up with it deserves a big shout out! It's colorful, sweet, very sweet, salty, and highly addictive. There I warned ya!

Peach Salad With Ginger Dressing

Have you ever gone to a Japanese restaurant and had salad with ginger dressing? Oh man if you haven't you had better try this. The dressing is jam packed with all sorts of ingredients that just come alive when you eat it. Usually you will get a plain iceberg lettuce covered with this dressing. Since it is peach season and ginger and peach really go well together I said lets give it a try. Well it was delicious and everyone loved it. I really wouldn't care if no one liked it because that's how much I like it and that means more for me!

Baked Chicken Quesadilla Rolls

Who says quesadillas have to be flat? Now taquitos are traditionally made with the small 6 in flour or corn tortillas, I only had the larger 8 inch ones so I decided to call them quesadilla rolls. Stuffed with chicken, salsa, and cheese they are a great appetizer, or weeknight meal because they are larger. They still are dunk-able though!

Pearl Couscous with Roasted Cauliflower and Tomatoes

Can you believe this was the very first time I have ever made pearl couscous. Now I know what I have been missing. I have made the regular stuff a billion times. Since it was straight up plain. I couldn't just cook it that way. So I added all this great stuff. I can eat roasted vegetables all day every day especially cauliflower. It's just so good! This was so tasty. It also seems to be a great vegetarian meal. Just swap the chicken stock for the veggie stock.

Chicken Cordon Bleu Casserole

What a week. TGIF is all I have to say. I leave you with this yummy amazingness. Make it for  Sunday dinner. It will not disappoint I promise. After I searches the internet for the perfect recipe, I just took all that I read and came up with this. I hate using caned condensed soups in casseroles. Many of the recipes I saw used them. So I guess this recipe is adapted adapted adapted etc etc...:)
