Peaches and Cream Cake


Sorry friends I needed to take a week off. All the hustle and bustle of the holiday and it being smack in the middle of  the week, it got a little crazy around here. This cake is a favorite summer time treat. This is my aunts recipe. Every birthday this is the cake you got. Seeing she has seven children I got to have it a lot as a kid.  It is the easiest cake to put together and oh so delicious.

Ingredients
1 Box White Cake Mix
1 Box Instant Vanilla Pudding Mix
3 eggs
1 cup milk
1/3 cup oil, vegetable or canola
1-15oz cans peaches in syrup, drained and sliced in half
1 pint heavy cream
1 teaspoon superfine sugar
1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F.
Blend cake mix, pudding mix, milk oil and eggs. With and electric mixer mix on medium for 2 minutes.

Grease and flour 2 8-inch round cake pans. Pour batter in each pan and bake for 34-38 minutes. Insert a tooth pick into the enter to insure it comes out clean. Cool completely before removing from pan. 

While cake cools, beat heavy cream, vanilla extract and sugar on high speed until semi stiff peaks form. Do not over beat. Transfer to bowl and set in fridge. 

To assemble the cake, spread some of the whipped cream on the first layer, single layer half of the peaches in a circular pattern like picture above. It actually doesn't have to be perfect no one will see this layer. Place other cake on top and and repeat the same steps using reaming whipped cream spreading on sides as well.
