Grilled Chicken Caprese


If you love mozzarella as much as I do this meal is for you. This is a quick and easy dinner. It comes together in a flash. Balsamic marinated grilled chicken topped with tomato basil and fresh mozzarella.  One of my favorite dinner dishes.

4 Boneless skinless chicken breasts
1 cup balsamic vinaigrette
1 large beefsteak tomato
1 ball of fresh mozzarella cheese
8 large fresh basil leaves
salt and pepper

Place chicken in a glass dish and pour dressing over top. Coat the chicken well on both sides and let marinate for 1-3 hours. I don't like to marinate chicken any longer than that. I think it becomes chewy. 
Slice mozzarella and tomatoes each into 8 slices. Set aside.
Heat grill to 350 and grill until done and internal temperature is 180 degrees F.  Keep  warm covered with foil.
Top each piece of chicken with 2 tomatoes, salt, pepper, 2 basil leaves and then 2 slices of mozzarella. The cheese will melt over the warm chicken. If the cheese doesn't melt you can pop it under the broiler for a minute or to. Or you can eat it with out it melted. Either way it's delicious.

  5. I put all of this on a lightly sauteed portabello cap before melting the mozzarella (which I did in the Weber).
