Red Skin Potato Salad




  • We recently had my sons annual birthday barbecue. I make an array of salads this is one of them. Simple to put together and tastes amazing! He was born on Memorial Day 13 years ago. A month early and impatient as ever there he was. Now since Memorial Day changes every year we still have his party on that Monday every year. I still can't believe he's officially a teenager. Where have the last 13 years gone? 
  • Ingredients:

  • 2 pounds clean, scrubbed new red potatoes
  • 6 eggs
  • onion, finely chopped
  • 1 stalk celery, finely chopped
  • 2 cups mayonnaise
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp brown mustard
  • 1/2 tsp white sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Paprika and Fresh chopped Parsley for garnish

Directions:

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

Whisk  mayonnaise, vinegar, mustard, sugar salt and pepper in medium bowl.
Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, onion and celery. Add dressing. Toss lightly. You don't want to break down the potatoes. Chill for an hour before serving. Sprinkle with Paprika and chopped Parsley for garnish.
