Potato Crusted Spinach Quiche

Happy Monday! I made this quiche on a whim. Literally. I used whatever I had on hand in the fridge and freezer. I love cooking like that. It comes together in a flash too and cooks quickly. It came out pretty dang good. I love using seasoned potatoes instead of pie crust also. It tastes so much better, I think anyway. 
Ingredients
1/2 bag frozen tator tots or hash browns
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
6 Large Eggs
1 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
1 1/2 cups frozen spinach defrosted and drained
1/2 onion grated
1 1/2 cup shredded cheddar jack cheese, or whatever you have

Preheat oven to 350 degrees F. In a pie plate all the tator tots and microwave on high for 2 to 3 minutes until they are soft. Spread soft potatoes across the bottom of dish and up the sides. Sprinkle with salt, pepper, onion and garlic podwer. Bake for about 20 minutes until potatoes are crispy. 

Meanwhile, whisk eggs and heavy cream in a large bowl. Whisk in salt, pepper, and oregano.
Next fold in spinach grated onion and cheese. Pour into pie dish on top of potato crust. Bake for 20 minutes or until center is no longer jiggly and knife comes out clean. Serve warm or at room temperature.

  5. This is great if you are having someone over who is gluten free. I think the tater tots must have a terrific taste as a crust. thanks for sharing this on foodie friday. I will pin it too.
