Barbecue Chicken Pizza

This is my new favorite pizza. I've had it before back in my days of working retail full time and then some. I must of forgot how good it actually was. You can cook your own chicken breasts like I did or cheat and but a rotisserie chicken. Big time saver. You can also use store bought dough, but I am partial to my recipe. That's all I will use forever and ever. Until I can't psychically can't make it anymore. That's how much I love it.

1 cup barbecue sauce, divided
1 cup cooked and shredded chicken
1/2 pound bacon cooked and crumbled

1/2 cup thinly sliced red onion
1/2 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese
Chopped cilantro; to taste (optional)


  1. Warm oil in a skillet over medium heat. Add chicken and cook, turning once, 5 to 6 minutes per side, until just cooked through. Transfer to a cutting board. When cool enough to handle, cut into 1/2-inch cubes. Toss chicken with one half cup of the barbecue sauce in a bowl.
  2. Position a rack in bottom of oven and preheat to 500°F. Place pizza crust on a large baking sheet  or pizza paddle for pizza stone. Sprinkle with half of both cheeses, arrange chicken and bacon on top, and then add remaining cheese and onion. Drizzle with the remaining barbecue sauce.
  3. Bake until cheese is melted and golden brown, 20 minutes. Let rest for 5 minutes. Sprinkle with cilantro, cut into slices and serve hot.
