Samoa Gooey Cake Bars


Do you love Samoa Girl Scout Cookies? Well I do they are my most favorite cookie in the universe. Caramel, chocolate, and coconut ='s heaven. I had some cookies left over since we buy them in abundance and then our friends give us some who's kids sell them. So I came up with these bars. They are oh so good and sinful. Only eat one at a time so you don't feel guilty. :)
1 box Yellow Cake Mix
1 Stick Butter, at room temperature
1 Egg
1 Box Samoa Cookies, chopped (If you can't get them Keebler now makes them. They are called Coconut Dreams)
1 Can Sweetened Condensed Milk, I used low fat
2 Cups Milk Chocolate Chips
1 1/2 Cups Shredded Coconut


Preheat oven to 350 degrees F. and line a 9×13 inch baking dish with non stick cooking spray.
Place cake mix, butter and egg into a large bowl, mix until dough forms. Using hands is easiest to mix together. Press dough into bottom of prepared baking dish. Top evenly with chocolate chips, then half the coconut. Sprinkle chopped cookies evenly across coconut then sprinkle remaining coconut over cookies. Drizzle sweetened condensed milk over top.  Bake for 30-35 minutes, until baked through. Immediately after removing from oven, take a plastic knife around edges to loosen. Let cool completely. Cut into squares and serve.

  1. These look amazing! I love how you took the base of gooey butter cakes and added the samoas to the top! I'll definitely have to try this!

  2. I would eat probably all of these and then ride the sugar high to get me through the day and it would be worth it! They look awesome and I love samoas and if your like me I buy boxes form all my friends who have daughters in girl scouts cause I'm supporting the cause. :) Not cause I'm stock piling and eat them when no one is home so I don't have to share.
