Pistachio Cake

Happy Friday the 13th! I make this cake on holidays. Its a snap to make easy peasy. It's probably even better in cupcakes. I haven't tried that yet. I think any kind of cupcake is amazingly good.


Ingredients
1 package Yellow Cake Mix (18.25 Oz)
1 package Instant Pistachio Pudding Mix (3.4 Oz)
4 whole Eggs
1-½ cup Water
¼ cups Vegetable Oil
½ teaspoons Almond Extract


Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tube pan.
In a large bowl mix together cake mix and pudding mix. Make a well in the center and pour in eggs, water, oil, and almond extract. Blend ingredients, then beat for 2 minutes at medium speed.
Pour into the prepared 10-inch tube pan. Bake in the preheated oven for 50 to 55 minutes, or until cake springs back when lightly pressed. Cool in the pan 15 minutes. Turn out onto a wire 
rack and cool completely.

  2. Lovely spring dessert! One question - what did you use to drizzle over top of the cake? I love Pistachio Cake!

    1. Hi! Thank you. I use plain vanilla cake icing. Melt 1-2 tablespoons per color in the microwave for 10 seconds add food coloring mix well and drizzle. :)

  8. WHOA... I made this last Easter and it came out amazing! Making it again for the Mother-in-law this weekend since she loves pistachios. As I am reading this I realize it was Friday the 13th. Today is: Friday the 13th... Coincidence?
