Mashed Potato Cakes with Rosemary and Chives

I love using leftovers for new dishes. I also hate to waste them. So I came up with these a while back . I know there are plenty of versions of mashed potato cakes. With the addition of Parmesan cheese, rosemary and chives takes these far away from being plain. 

  • Ingredients
  • 2 cups COLD, Mashed Potatoes, THEY HAVE TO BE COLD!
  • 1 whole Egg Beaten
  • 2 Tablespoons Flour
  • ½ cups Grated Parmesan Cheese
  • 1 Tablespoon Chopped Chives
  • 1 sprig Rosemary (chopped)
  • 2 Tablespoons Grated Onion
  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • Directions
  • In a large bowl, combine all the ingredients (except the oil and butter).
  • In a large skillet, heat 1 tablespoon olive oil and butter over medium high heat and then drop four 1/4 cupfuls of batter into skillet. Cook for 1-2 minutes on each side or until golden brown. Repeat with remaining batter. Serve warm.


  1. I actually haven't made mashed potato cakes yet but these do look quite delicious!

  2. Coming up with recipes using leftovers is my favorite, because I always have so many leftovers! The results of cooking for one.

    1. I agree. I cook for four sometimes five or more. All depends on who pops up around dinner time lol.
