Chicken and Tomatoes

I hope everyone had a fabulous weekend! I am still tired from all the cooking and entertaining. And because I am feeling a wee bit lazy today here is a super lazy meal for ya.
Frozen boneless chicken breasts (yes frozen), eggplant, tomatoes, mushrooms, garlic, onion, and capers all thrown in the slow cooker. Told ya it was super lazy. Give it a try you won't be disappointed.

Ingredients
3 Frozen boneless chicken breasts, yes frozen
2 cans whole stewed tomatoes
1 onion chopped
3 cloves garlic chopped
1 whole small eggplant peeled and diced
1 pint baby bella mushrooms, sliced
1/8 cup capers
1 tsp salt
1/2 tsp black pepper
1 tbs Italian seasoning
1/4 cup red wine
2 chicken bullion cubes


Directions
Place chicken breasts in slow cooker add all other ingredients. When adding the tomatoes you can break them up with your hands. Cook on low for 8 hours. Serve over polenta, rice or your favorite pasta.
