Samoa Gooey Cake Bars


Do you love Samoa Girl Scout Cookies? Well I do they are my most favorite cookie in the universe. Caramel, chocolate, and coconut ='s heaven. I had some cookies left over since we buy them in abundance and then our friends give us some who's kids sell them. So I came up with these bars. They are oh so good and sinful. Only eat one at a time so you don't feel guilty. :)

Soft Bubble Cheesy Garlic Muffins

Bread another one of my weaknesses. It really is terrible. I am such a carboholic. If they had carboholic's anonymous I'd go, I have to! These little bad boys are so good along any dish. We had them along with baked ravioli. Soft, cheesy garlicky and buttery, my kind of bread!

Mashed Potato Cakes with Rosemary and Chives

I love using leftovers for new dishes. I also hate to waste them. So I came up with these a while back . I know there are plenty of versions of mashed potato cakes. With the addition of Parmesan cheese, rosemary and chives takes these far away from being plain.

Oven Roasted Tomatoes with Garlic and Herbs

These little bad boys are so dang good. I usually eat them over grilled chicken or over pasta. My father in law loves them over striped bass....I will cook the fish but I defiantly wont ever eat it. Sorry not a fish fan. I can't do it. I have found anything I ate in abundance as a child I can no longer eat today. I'm weird I know. Give these a try they won't disappoint.

Thai Coconut Shrimp and Spinach Curry

I was fumbling around my kitchen trying to come up with a quick meal for last minute company when I realized I had all of these ingredients in my fridge and pantry. Well almost I had to use frozen shrimp. Shhhh....This came out really well and so tasty. The sweetness of the coconut milk alone with the spice of the red curry paste is just an amazing flavor. I added spinach to this just because I had it and needed to use it. Normally it would not have spinach in it. Don't be shy or nervous about trying new things, you would be surprised how well they are liked sometimes.

Chicken and Tomatoes

I hope everyone had a fabulous weekend! I am still tired from all the cooking and entertaining. And because I am feeling a wee bit lazy today here is a super lazy meal for ya.
Frozen boneless chicken breasts (yes frozen), eggplant, tomatoes, mushrooms, garlic, onion, and capers all thrown in the slow cooker. Told ya it was super lazy. Give it a try you won't be disappointed.

Potato Gratin Gruyere

This is a perfect Easter side dish. I would be serving this along side my Easter ham but my whittle ones only eat roasted or mashed potatoes. They are a tad bit picky. I could eat this all by it self for a meal. The nutty Gruyere cheese adds a grown up aspect to it along with great cheesy goodness.

Baked Buttermilk Corn Flake Chicken

Love fried chicken? Well I do! I just don't want the grease and the mess that goes along with it. This comes out exactally the same baked in the oven. I use Corn flake crumbs a lot. Sometimes instead of Panko. They are way crispier. This chicken is marinated in buttermilk with spices, onions and garlic. Then baked to perfection.

Brownie Bites

Mmmmm, chocolate. The secret here is adding instant coffee to the mix. I really dislike instant coffee. You may thing you will taste the coffee in the chocolate, trust me you wont.  No one will ever know.  Since I rarely bake period and rarely bake from scratch, I do use brewed coffee in place of the water in my box brownies and chocolate cakes. It brings out the richness and the chocolate flavor.

Marinated Burger

Ever have a marinated burger? All I can say is wow. I had one at a local restaurant and of course said I can make that. One it's easy and two you can say good bye plain old boring bland burgers.
