Hello salad, lunch dinner or anytime. Bacon dressing..I'd would eat this for a snack! Spinach, red onion, roasted peppers, almonds shrimp and bacon. Need I say more!
Ingredients
8 oz shrimp, peeled and deveined
6 oz baby spinach
3 strips bacon, cut into small pieces
1 whole roasted red pepper
1 red onion, sliced
2 Tbsp slivered almonds
1/4 cup red-wine vinegar
5 tsp sugar
Preparation Instructions
Set a large skillet over medium heat. Cook bacon pieces until crisp, 5 to 7 minutes. With a slotted spoon, transfer to a paper towel.
Season shrimp with salt and pepper to taste and add them to the skillet, along with almonds. When shrimp are pink and firm (2 to 4 minutes), Remove from pan set aside. Stir in vinegar and sugar ,and season again with salt and pepper to taste. If the skillet looks dry, add a splash of olive oil.
Divide spinach among 4 plates and top with roasted pepper red onion. Spoon shrimp mixture over spinach, pepper and onion. Evenly spoon the warm dressing from the skillet, and sprinkle the bacon on top.
