FOR THE PORK:
1 package of Pork cutlets, 8 count
salt and pepper
FOR THE SAUCE:
Time to make that sauce. In a sauce pan saute the onion and garlic with some olive oil. When onion is just about carmalized add ketchup, maple syrup, brown mustard, lite brown sugar, apricot preserves, salt and pepper and cayenne pepper. Stir all together then bring to a boil, lower heat and let reduce down about 20 minutes.
While the sauce is simmering away, Season cutlets with salt and pepper. Heat a large oven proof skillet over medium high heat. Sear cutlets 2 minutes on each side. Pour sauce over the top and broil on high 2-3 minutes until nice and sticky.
