Merry Christmas to all!
I hope everyone has a great
love filled holiday
surrounded by family and friends.

Oh how I love soup. Did you ever have that one favorite dish where you licked the bowl clean? I may or may not have done that with this soup. I am pleading the 5th; sorry. I actually had full intentions of making broccoli and regular cheddar soup but only had cheddar jack cheese. Which really is my favorite anyway I use it in a lot of my dishes.

Who doesn't love Christmas cookies? I usually spend about two days baking them, put them in all their tins and send them off to wherever we end up. These butter cookies have just the right amount of anise flavor plus crunchy seeds to finish them off. A perfect addition to your Christmas cookie collection of recipes.

Pork is the other white meat. Sometimes your chops can come out dry and tasteless due to over cooking. Let's face it pork really just doesn't have that much flavor. This dish has tons of flavor. The herbs and dijon mustard compliment each other so well. I always opt for the tenderloin over the chops and roasts. It really is melt in your mouth delicious. It's like the filet mignon of pork. So if your looking for and easy quick weeknight meal or even a holiday dish this is perfect!

Do you love green bean casserole? I do! I know I have mentioned this before I just hate using caned condensed soup for anything. Something about it just grosses me out. I found that there is many ways to substitute it and not that hard to do. It's amazing what a roux can do I tell ya. A nice thick cream sauce seasoned with garlic, onion, Parmesan cheese, and some more, poured over fresh green beans with yummy red pimentos topped with crispy onions. This is the perfect Christmas side dish. Oh and PS...I finally am finished with my shopping; whew! Amen :)

Happy Monday! It's been so dreary here on the Island and what a perfect day for soup. Italian Wedding soup as a mater of fact! I think this is my favorite kind of soup, I just love the broth with the spinach, carrots, meatballs and tiny little pasta. Total Comfort Food...TCF.

Happy Monday! Well not really I dread Mondays. I love the weekends. I love everything that comes along with them. Shopping, cleaning(not really), and Sunday family dinners. I made this dish for Thanksgiving and I will just have to make it for Christmas and even Easter to. It is by far the best sweet potato recipe I have ever had. It truly is a souffle light, fluffy and airy. I bet instead of using it for a sweet recipe you could add some savory seasonings and it would be even better. I will have to give that a try. It's a snap to make and really is delicious.

This picture does not do these potatoes justice. This was such and easy side dish to throw together and forget about. Sick of those boxed scalloped potatoes but always afraid to try to make the real ones? Well give this a try. I assure you, you will not be disappointed.

I love love love Kielbasa. I don't like the grease that comes along with it. So when I was in the store I am saying to myself they must have a Turkey version and after some searching I found it! Simmered in yummy Bavarian Sauerkraut all seasoned up, this dish was delicious. I paired it along with my sweet potato perogies. It was a fantastic meal. I hope everyone has a great week and stays warm here on the east coast!

All I can say is it's been one crazy summer and fall. I am actually looking forward to a whole new year. With all that has taken place with the hurricane and with all the families that are still nearby without homes, I am so very thankful to have mine. So everyone hug and kiss their kids a little more, squeeze your hubby or man, and give thanks to your parents and family. With that said I am taking the week off, to prepare for our Thanksgiving feast. It will involve food shopping, cleaning, cleaning and some more cleaning. Oh and a whole lot of cooking. Gobble Gobble everyone!!!
Thursday, November 15, 2012
If your like me and host Thanksgiving every year you always have leftovers. I know I do and that's after everyone left with doggie bags. This dish is perfect for your left over turkey and stuffing. Or you can start from scratch. It's an easy weeknight throw it all together meal.

Tis the season for sweet potatoes. I am not sure if people realize how versatile they really are not to mention delicious. Talk about a ton of flavors coming together, this dish has them all. It really is that different and if my picky eaters ate them yours will to! You can even make them vegetarian. These are just plain good, 'nuff said!

Chicken, I cook a lot of chicken. I really have no explanation why? This chicken is delicious I mean really really delicious. It is one of the easiest dishes to make. I served this along side some crock pot scalloped potatoes that I made during our power outage. I was able to run the slow cooker off the generator. Who knew?! I will be posting that recipe soon. We got some snow last night not to bad though. I hope everyone stays warm!

Happy Monday. Maybe? I hope all my east coast friends have gotten some gas to make to to work. I fueled up before the storm so I still have some left. Now lets talk food.
Perogies any way any form I just love them. So I decided to try and make them. Well it was a success. Not only a success but easy peasy to make. They are delicious very rich in flavor. Topped with some caramelized onions the sweet and salty flavors play off each other amazingly well.

Let's take a break from blogging per say and please take a minute to donate even small change to victims of Hurricane Sandy. The devastation is unreal. Not only was most of my village under water and many friends homes lost, but there are so many people with out anything at all. Below are some links for you to give anything you can to those less fortunate during this terrible time.
Thanks so much!

As I post sit here and post this. I am running my power in my home from a gas powered generator. Due to hurricane sandy we will surely be with out power for fifteen days. Yes FIFTEEN days! Thank goodness for a friend that has lent us this beast to run power to our home. Our village actually canceled Halloween yesterday. I took my daughter a few towns over so she could enjoy her day. There has been no school all week. I can't not begin to describe to you the devastation in our area. Peoples homes have floated away. Our beach is gone and destroyed. The ocean has broken through to the bay. We have the National Guard and various other military troops patrolling and helping people get their belongings from their flooded homes. They are using boats in our streets a sight I thought I'd never see. I am thankful enough that the water only just missed our home by two short blocks. I will deal without the power over that any day! So if everyone can maybe just say a little prayer for all the people who have lost a home or a car or just anything at all; maybe it will make things a little easier.
Monday, October 29, 2012
I may not be around for a few days or so. This dang hurricane is going to slam right into our little beach town. And since we will need to evacuate and head inland I am not sure what the after math will be. The schools have closed, Halloween will be non existent, and we will most likely have no power for another ten yes ton days like last year. Wish us luck! What a Monday.
So what do you do with 150 pounds of fresh veggies that your farmer friend just gave you? Shriek I don't even have room in my freezer for all this. The cabbage alone were 10 pounds each. Needless to say I have been giving as much as I can away.
Because it's that time of year to get away from the barbecue and get back to "good old home cookin", here is my dad's recipe for Stuffed Cabbage. He has tought me how to cook since I was a child. Now I cook for him. This time of year makes me so happy to just make the stick to your ribs comfort food. I hope you enjoy it!

Chicken, Bacon, Ranch Oh My! Ever try this? You must. I really really mean you must. I have even out it on a nice piece of crusty bread. This week I am seriously procrastinating starting Christmas shopping. I don't even know what the heck my kids want yet. My daughter who is 7 is super easy. My son how ever is 13 and is just so hard to shop for. No more Lego's and I have ran out of room to store them all. Any ideas? He is my brianiac loves to read and loves american history. Ish....I just want to get through Halloween and Thanksgiving. Have a great weekend!

Mexican food and pasta I think so! When I could not decide what to make and was sick of the traditional pasta and tomato sauce, and wasn't in the mood for taco's I made this. You can make it in a skillet version or bake it off. I liked the baked version better. It was a hit. Usually when I make "nontraditional" things my family gives me the what the heck is this look. They are all such a meat and potatoes clan. So when you are in the mood for a pasta with a twist give this a try!

Ahh the almighty potato. I don't know about you but I can make a meal out of just potatoes. They are one of my favorite vegetables. I came up with this dish because we do eat them a lot and wanted a new version to try. Well they were great. I served them along side my German Pork Chops and Kraut. You could serve them with just about anything. I think potatoes are one of the ultimate comfort foods. Hope everyone has a great week!

It's Oktober Fest! Any one who has some German in them knows about all the yummy delicious food that comes with this month. Oh and the beer as well. Not sure just what Oktoberfest is click here. So since I am German and have a love for really all food, here is one of my fall favorites. Tender pork baked with Bavarian Sauerkraut (not the regular stuff) apples, onion and lot's of seasoning. Trust me on the Bavarian kraut, It shall not disappoint. It makes all the difference.

Enchalidas baby! I just love love love Mexican food in every way. Any chance I can eat it or make it I do. This is the easiest way to make them. I am a firm believer that meat should totally shredded in Mexican cooking. Cooked to the point it falls apart itself. Weather it be chicken, beef or pork. Even when I make the simplest quesidillas for the kids I take the extra mile to ensure the meat is cooked this way. It's just not the same with out it.

It's a wee bit chilly here this October morning. Tis the season to eat soup! I just love soup in ever way shape and form. Thin, thick, creamy, stew, rice, barley, noodles chicken, turkey, beef, veggie, all of it! Now there is quite a few different versions of chicken and dumplings. Some are just with no veggies, some have a thin soup base, others a thick soup base. I like mine with just a touch of cream. Just enough to make it nice and velvety smooth. Along with chicken and yummy veggies. I also add Parmesan cheese to my dumplings to make them a little interesting. They are pretty boring with out any flavor. I hope everyone had an awesome weekend!

Who doesn't love some good finger foods to watch the big game with. I know I do. I love to pick on all types of yumminess. It's officially the last Friday of Summer. Oh and the iphone5 comes out today. I'm sorry but seriously? Waiting in line for more than 24 hours for a phone is a bit ridiculous. IT'S A PHONE! It will still be there even if the sell out. They will send more. Sorry just had to vent as I am watching the news. Anyway....what's everyone's plans for the weekend? Apple picking? Going to see the leaves change? We will be at the annual end of summer bonfire with friends. Lot's of food and one big fire. It should be an fun night. I honestly cant wait to put on some jeans, uggs and a nice comfy sweater. I love this cool weather. With that all being said have a great weekend everyone!

Last night we had a wicked storm here on the east coast. I can always hear the ocean from my house but last night it sounded like a jet plane coming in for landing. It was roaring! Then it poured most of the night with some wicked winds. Thankfully we had no damage here. Now on to the cookies. Oh how I love these. Well I should say my kids love them even more. Peanut butter cookies slathered with Nutella and sandwiched together. Need I say more?

What a beautiful weekend. I saw a beautiful couple get married Friday night, Saturday had an awesome fire in the backyard, Sunday just relaxed around the house. My feet still hurt from those dang 4" heels. I really hate playing dress up! Maybe it's ok sometimes. This pasta is soooo good. Fresh tomatoes, garlic basil, white wine and a splash of cream. "Capriciosa means capricious in English." Capricious means whimsical, fantastic, irregular and even unrestrained. That is this dish in a nutshell.
Thursday, September 13, 2012
We were having pasta the other night and I forgot to buy some Italian bread. So I whipped up a batch of dough and created these. These guys come together in a snap! Just bake like a pizza and cut into sticks. No separating dough and rolling.

This is a flash back post. I have been so busy this week with the kids and school dance work etc.....
And since it was 42 degrees this am when I woke at 5:30; all I could think of was it's slow cooker season! My favorite time of year!
Yes you read right Cola as in Coca Cola. Who knew! Cola is the secret ingredient that makes it sweet and savory. A hearty, savory slow cooker stew with potatoes, carrots, celery, stock, herbs and spices.
This a family favorite, I highly recommend giving it a try.

The sun hasn't shined here in two days. Yesterday it poured all day. Thunder, lightening with what felt like 200% humidity. Can you say bad hair day! Not to mention my poor kids had to start school in the pouring rain. That makes three years in a row it has rained on the first and second day of school. Weird? So since I just want it to be fall already; so I can wear my jeans and boots I give you soup!

I hope everyone had a great Labor Day Weekend! I know I did. Saturday I got to go into the city to Radio City Music Hall to see Cirque Du Soleil's Zarkana. It was a suprise early birthday present. Let me just tell you...OMG it was amazing, just totally amazing!!! I can't not believe the human body is capable of moving like that. I sure wish mine would. If you are ever in an area where they are touring I highly recommend you see it. Sunday we wen't four whellin' on the beach for an all day BBQ event, with all of our friends. As usual I got to burnt. I just need to stay far away from the sun. So as I am tending to my sun poisoning I give you this delicious recipe. I love pork tenderloin especially when it's lathered up with sauce.

Ahhh garlic. One of the many ways to keep the vampires away. Let me tell you this dish will do it. How ever it's suprisengly not that garlicky. The garlic turns so sweet and savory as it browns it's delicious! This is my spin on this classic french dish. Oh how I love french food, it's just so good all of it. Maybe not the pate part. I don't do liver or pate. Let's jsut forget that I even brought that up. My apologies.

Roasted corn baby! We have a friend that has a dad that is a farmer out on the northeastern end of the island. There is something about this corn that is just so sweet and amazing. Every summer I come home from work and there is a "FIFTY" pound bag of fresh corn on my deck. Yes I said fifty. Gosh I love this farmer I call him Sanford. His name is really Will. He even brings us winter veggies. It's a good connection to have. We've got the veggie hook up! So I have managed to give all my family, friends and neighbors fresh corn. Roasted some up for us and still have ten pounds left. I go through this every year. So I am just going to freeze the rest. This corn is a staple at any festival or pumpkin field you go to here on the island. It's soaked in water, grilled to perfection then dipped in melted butter. It doesn't get any better than that!

So we all know how blah blah bland ground turkey can be. Well after seeing Mrs. Paula Deen make these bad boys I fell in love. These are by far the ultimate turkey burger. Jam packed with flavor and a surprise crunch. I topped mine with avocado ranch sauce and some cool crisp lettuce. I promise they will not disappoint.
Wednesday, August 22, 2012
Ok so this is a total cheaters meal. Ready in just about 30 minutes. It is a perfect quick and easy weeknight meal. The "manziz" will love them to. Remember the way to a mans heart is through his stomach. That what mine tells me anyway. Deli meat piled with onions cheese and smothered in au jus. All on top of crusty bread.

Danggggg....as Joe Dirt would say. Very very funny movie if you haven't ever seen it. Anyways, I made this addicting sugary goodness with my daughter for a get together with friends we had. She just had to make a snack for everyone to. Why not have cake batter popcorn along with chips, dip, and some wings. I really don't know where this recipe originated from, there are so many on the internet. But whomever did come up with it deserves a big shout out! It's colorful, sweet, very sweet, salty, and highly addictive. There I warned ya!

Have you ever gone to a Japanese restaurant and had salad with ginger dressing? Oh man if you haven't you had better try this. The dressing is jam packed with all sorts of ingredients that just come alive when you eat it. Usually you will get a plain iceberg lettuce covered with this dressing. Since it is peach season and ginger and peach really go well together I said lets give it a try. Well it was delicious and everyone loved it. I really wouldn't care if no one liked it because that's how much I like it and that means more for me!
Friday, August 10, 2012
Who says quesadillas have to be flat? Now taquitos are traditionally made with the small 6 in flour or corn tortillas, I only had the larger 8 inch ones so I decided to call them quesadilla rolls. Stuffed with chicken, salsa, and cheese they are a great appetizer, or weeknight meal because they are larger. They still are dunk-able though!
Thursday, August 9, 2012
Can you believe this was the very first time I have ever made pearl couscous. Now I know what I have been missing. I have made the regular stuff a billion times. Since it was straight up plain. I couldn't just cook it that way. So I added all this great stuff. I can eat roasted vegetables all day every day especially cauliflower. It's just so good! This was so tasty. It also seems to be a great vegetarian meal. Just swap the chicken stock for the veggie stock.

The best part of pasta salad is you can make a huge batch of it and eat it all week for lunch or even dinner,if you want to. I want to. I make all different kinds of pasta salad. The possibilities are endless really. You can basically throw anything on hand onto some cooked pasta with your favorite dressing. Homemade or even bottled.

If you love mozzarella as much as I do this meal is for you. This is a quick and easy dinner. It comes together in a flash. Balsamic marinated grilled chicken topped with tomato basil and fresh mozzarella. One of my favorite dinner dishes.
Tuesday, July 24, 2012
Roasted Potatoes, you an do so much with them. Breakfast, lunch, dinner. Heck I'd even eat them as a snack. Oh wait I do. I guess potato chips count. Roast em, boil em, grill em, make salads out of them the list goes on and on. I decided to make these spicy with fresh garlic and some red pepper flakes. Who says chimichurri has to only be on meat?

Every been to NYC and had a dirty water dog? Yes here in NY we call them dirty water dogs. I'd love to assume that's not the case at all. I've heard them be called push cart dogs, city dogs yada yada yada. Sabrett hot dogs with onion sauce and mustard. Maybe another with mustard and sauerkraut. Who's counting. Getting one of these is just a ritual when we go into "The Big City" as my kids call it. If you haven't had the chance or live on the other side of I don't know where give this recipe a try. Get some Sabrett natural casing beef frankfurters and plain white bread hot dog buns. Top with mustard and these onions and there ya have it.
