One thing I always have in the fridge is hummus. I love snacking with it. My favorite is the roasted red pepper one. Great for lunch or after workout snack, high in protein and fiber. I have also served these as an appetizer, there wasn't any left.
Ingredients4 whole Pita Breads or Whole Grain Sandwich Thins
½ cups Hummus (I Used Roasted Red Pepper)
1 cup Feta Cheese, Crumbled
1 whole Small Red Onion, Sliced Thin
2 cups Fresh Spinach, Chiffonade
1 whole Ripe Large Tomato Seeded And Chopped
½ cups Sliced Kalamata Olives
Preparation InstructionsHeat oven to 400°F.
Place pita breads on an ungreased jelly roll pan.
Spread hummus on each pita bread. Sprinkle with cheese.
Bake 8 to 10 minutes or until cheese is melted. Top each pizza with onion, spinach, tomato and olives.
