There is just something about all the food and goodness that goes along with cooking on the fall. I guess its the comfort or maybe just the stick to your ribs stuff. Whatever it is I just love it. This is a great one dish meal. Red Bliss Potatoes, Sweet Potatoes, Butternut Squash, Chicken Sausage and seasonings all roasted up in the oven. My kids did not even know there was Squash in there hehehe....
3 large red bliss potatoes or new
1 large sweet potato
1 small butternut squash
1 medium onion, peeled and quartered, layers separated
2 cloves of garlic
2 tsp extra virgin olive oil
kosher salt and fresh cracked pepper to taste
1 tsp chopped rosemary (fresh or dry)
1 tsp Italian seasoning
1/2 tsp garlic powder
1 lb Italian chicken sausage (al fresco's) cut each link into 6-7 slices
Preheat oven 375 degrees F
Cut Red potatoes into 1 inch pieces, peel the sweet potato and the squash (cleaning as well) and also cut into 1 inch pieces. Add to a large mixing bowl. Add the onion, garlic, olive oil, rosemary and Italian seasoning, garlic powder, salt, and pepper combining well. Place on a parchment lined baking sheet to prevent sticking. Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through. Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don't burn.
