Grown Up Mac And Cheese


Sorry kids this ones for the adults. Ooogey gooey cheesy goodness! This is the ultimate comfort food.
It also goes quite well with my cheese and pasta obsession.

Thank goodness it will be in the 50's temperature wise here today. I won't be freezing my butt off trick or treating, nor will the kids in their costumes. I hope everyone has a fun and safe Hallloween.

Chicken Tortilla Pizza

Here is your SUNDAY-FUN-DAY recipe!  This is the easiest thing to make and its so good.

All I can say is it is absolutely freezing here in NY. Some how we dodged the snow and only had rain. Funny thing this island, it's like we are protected even though we are totally open to the Atlantic Ocean, we hardly ever get snow. My family up the line a bit got stuck with almost 20"and no power. Hoping that doesn't last to long. I mean what happened to fall? It will be oh so cold trick or treating. I will be making my cola beef stew to follow soon.

Roasted Potatoes, Butternut Squash and Chicken Sausage

There is just something about all the food and goodness that goes along with cooking on the fall. I guess its the comfort or maybe just the stick to your ribs stuff. Whatever it is I just love it. This is a great one dish meal. Red Bliss Potatoes, Sweet Potatoes, Butternut Squash, Chicken Sausage and seasonings all roasted up in the oven. My kids did not even know there was Squash in there hehehe....

This falls between the lines of man food and woman food. I'm leaning more along the lines of man food. He scarfed this down in no time. Truth is it's a smorgasbord of goodness. Another truth is sometimes we just have sandwiches for dinner. This one is great for any left over steak or you can go ahead and make it fresh.

Steamed Potstickers

I like to make my own Asian food, as best I can anyway.  I can not get enough of these. They are so dang good. They also turned out surprisingly well. You can put them in soup or serve as a side. Why not even eat them for a snack.

On another note. Those of you that are familiar with Tasty Kitchen, I was shocked to see that I was chosen as the featured member of the week! It was such a nice surprise. They are such a different spin on traditionsl lasagna and a snap to make. I thought for sure they would be a little challenging, not at all. You can even make one at a time. Now you wont be left with an entire tray of lasagna.

Seasoned chicken oven roasted to perfection.  Serve it along side your favorite potato and veggie side. This dish is a perfect weeknight treat! Relatively simple to make, yet utterly delicious to eat.
I make a lot of chicken. It is my other favorite thing to eat instead of pasta. I think I have made it in every way shape and form at one time or another.

Lemon all the ways I love thee... I can't get enough of it, sweet or savory. This cake is so good and of course easy like I've said before I am no baker. I don't think I have ever made a cake from scratch. Maybe I will try. It is so much easier with shortcuts though. Make sure you eat this warm it is much better that way.

Carciofo Tuffo Caldo...AKA Hot Artichoke Dip

SUNDAY-FUN-DAY! Carciofo Tuffo Caldo...WHAT?  This dip fancies up the traditional artichoke dip with the addition of sun-dried tomatoes, roasted red pepper, and black olives. I came up with this last winter for a last minute gathering. It was basically whatever I had in the fridge. I have to say it came out pretty darn good. Merryweather mama even made it and posted it on her site. I was thrilled. Any who enjoy it!Serve with sliced baguettes or crackers.

Set it and forget it! Stick to your ribs oh so good. Not to mention it has red wine in it! Served over my grand mothers sour cream mashed potatoes which are to die for. I use them for lots of side dishes. Perfect for a cold rainy day. It sure is cold and rainy here on the east island today. Missing the cool sunny weather of fall.

Spinach I count that ways I love thee....I think I put it in almost everything. I especially sneak it in food when ever my son wont notice. My bunny rabbit of a daughter will eat it in every way shape and form. She will eat anything. I honestly don't know where it goes. Maybe a bottomless pit. Anyways this is a great year round salad. It will surely warm you and fill you right up! It is a great main dish or even a side dish.

Or even just a memory of a favorite dish your grandma made. This is a spin off of my grandmas lasagna. In stead of lasagna I decided to make bolognese baked ziti. Crispy Panko Broccoli and Cauliflower Gratin


Fresh brocoli and cauliflower are baked together with crispy panko parmesan breadcrumbs. This is low carb, low fat, vegetarion friendly, Heck it's everything friendly. How could you go wrong. It's the perfect side dish for any meal. Even better for Turkey Day. It's  mild flavor is perfect for picky eaters.

Almond Joy Brownies

Can you say heaven, yes that is what these are. I don't know if it's the almond, the coconut, or chocolate...but they are one devine treat. I love brownies also. You won't see me posting to many baking recipes here. I am no baker, at all, in any way shape or form. Mainly because I hate to measure, and can be a bit impatient at times. I'd rather cook 24-7.  Measuring like Rachel Ray. A palmful of this a pinch of that. It always comes out better that way. So on the rare occasion you do see something baked it may have short cut ingreidents in it. That's just how I roll.

Lentil Stew with Sausage and Spinach

LENTILS....Pretty boring and bland. To make up for their boringness, lentils are forced to bring many health benefits to the table in order to get noticed. They are high in fiber, low in calories, extremely filling and will soak up the flavors of whatever liquid you decide to cook them in.  Paired with chicken stock, fresh spinach, and smoky italian sausage this lentil stew will quickly become your favorite while eating healthy! My six year old asked for this dish...go figure. She is my healthy eater her older brother not so much. I will settle for one.
