Saucy Beef Carnitas

The secret is in the sauce. Slow cooked beef , fire roasted tomato's, jalapeno's, lot's of garlic and roasted bell peppers, served over a warm corn tortilla = YUMMY!

1 lb Chuck steak or London broil
5 cloves garlic
2 tbs fresh chopped cilantro
1 can fire roasted tomato
1 medium onion diced
1 roasted bell pepper chopped
1 to 2 tbs jalapeno sauce
1 cup red wine
1 cup beef stock
½ cup brewed coffee
1 tsp sugar
1 package chipotle taco seasoning
1 tsp corn starch

Preparation Instructions:
Add all ingredientsto slow cooker, mix well. Then add the meat. Flip over to coat. Cook in slow cooker on low 6 hours. Remove meat and shred with two forks. Wisk in corn starch and return meat to slow cooker for another 30 minutes. Spoon into corn tortillas or over Spanish rice.
